Detection of Starch in Food Samples :-
Starch is a complex carbohydrate in the human diet and is contained in many staple foods. Starch on hydrolysis gives glucose, which is the main source of energy for our body. The presence of starch in a food item can be tested by treating the extract of the food item with iodine solution. Starch gives blue-black colour with iodine solution due to formation of starch-iodide complex.
Starch solution + Iodine solution ⎯→ Blue-black colour
